Methi Kadhi – A Comforting, Healthy Delight

Ingredients:

  • 1 cup yogurt
  • 2 tablespoons besan (gram flour)
  • 1½ cups water
  • 1½ cups fresh methi (fenugreek leaves), finely chopped
  • 1 tablespoon ginger-green chili paste
  • 2 tablespoons oil
  • 2 tablespoons ghee
  • Salt to taste
  • ½ teaspoon cumin seeds (jeera)
  • 1 cinnamon stick
  • 2 cloves
  • ½ teaspoon asafoetida (hing)

Method:

  1. In a bowl, whisk together the yogurt, besan, and water until smooth, ensuring there are no lumps. Set aside.
  2. Heat oil in a kadai (deep pan), add the chopped methi leaves, and sauté until they turn soft and fragrant. Stir in the ginger-green chili paste.
  3. Pour in the yogurt-besan mixture, add salt, and cook on low-medium heat, stirring continuously. Keep stirring to prevent curdling and cook until the kadhi thickens and the raw taste of besan disappears.
  4. For the tempering, heat ghee in a small pan. Add cumin seeds, cinnamon, cloves, and asafoetida. Let them sizzle for a few seconds, then pour this aromatic tempering over the kadhi.
  5. Give it a final stir, and your flavorful methi kadhi is ready to serve!

This dish pairs wonderfully with warm khichdi or steamed rice, making for a light yet wholesome meal.
