Delicious Kadai Paneer Recipe

Kadai Paneer is one of the simplest and tastiest paneer dishes I often prepare at home. It’s easy, flavorful, and comes together in no time. If you’re looking for a quick paneer recipe with a rich, spicy twist, this one is perfect. Let’s get started!

Ingredients

For the Paneer Mix:

  • 1 cup paneer (thawed and cut into cubes)
  • 2 onions (cut into cubes)
  • 3 tomatoes (chopped)
  • 1 capsicum (cubed)
  • 1 tablespoon ginger (finely chopped or sliced)
  • 2 green chilies (slit)
  • 1.5 teaspoons red chili powder
  • 1 tablespoon coriander powder
  • 1 teaspoon garam masala
  • ¼ teaspoon turmeric
  • Salt (as needed)
  • ½ teaspoon dried fenugreek leaves (kasoori methi)
  • 3 tablespoons fresh coriander (chopped)

For Cooking (Tempering):

  • 2 tablespoons oil or butter
  • 1 teaspoon coriander seeds (lightly crushed)

Instructions

  1. Heat oil or butter in a pan or kadai. Add crushed coriander seeds and let them sizzle.
  2. Toss in the chopped ginger and sauté for a few seconds until fragrant.
  3. Add the cubed onions and slit green chilies. Stir-fry until the onions turn soft and translucent.
  4. Mix in the chopped tomatoes along with salt. Stir well and let them cook down.
  5. Sprinkle in the red chili powder, coriander powder, garam masala, and turmeric. Cook everything until the tomatoes turn mushy and the oil starts to separate.
  6. Add the cubed capsicum and stir-fry for a minute. It should stay slightly crunchy and not turn too soft.
  7. Gently add the paneer cubes (make sure to soak them in warm water beforehand for a soft texture).
  8. Crush the dried fenugreek leaves between your palms and mix them in.
  9. Pour in about ½ cup water and stir well. Let it cook for a couple of minutes until the paneer absorbs the flavors and the gravy thickens slightly.
  10. Finally, sprinkle fresh coriander leaves and give it a quick mix before serving.

Tips for the Best Kadai Paneer

  • Always soak paneer in warm water before adding it to the dish for a soft and fresh texture.
  • Do not overcook the capsicum—it should remain slightly crisp for the best taste.
  • If you prefer, you can replace chopped ginger with ginger-garlic paste (about 1 teaspoon).
  • Cook the entire dish on a high flame except when softening the tomatoes.
  • Fresh paneer works best, but if using frozen paneer, ensure it’s thawed properly.
