Mornings in our home are always a rush—everyone has somewhere to be, something to do. Amidst all the chaos, I always make sure that breakfast is not just quick but also nutritious. That’s where Paneer Bhurji comes in—my go-to meal when I want something high in protein, packed with flavor, and ready in minutes.

What I love most about Paneer Bhurji is its simplicity. With just a handful of ingredients—soft crumbled paneer, crunchy capsicum, onions, and a perfect mix of spices—it transforms into a hearty, fulfilling dish. It pairs wonderfully with warm toast, stuffed inside a wrap, or even alongside a bowl of dal for an extra boost of nutrition.

From a health perspective, paneer is an excellent source of protein and calcium, giving us the energy to power through the day. The capsicum and onions add vitamins and fiber, while spices like turmeric and cumin help with digestion. And let’s not forget the comforting warmth of garam masala that makes it taste just right!

Simple & Flavorful Paneer Bhurji

Ingredients:

  • 200g paneer (cottage cheese)
  • 1 cup finely chopped onion
  • 1 cup chopped capsicum (bell pepper)
  • 3 green chilies, finely chopped
  • ½ inch ginger, grated
  • 2 tbsp coriander powder
  • 1 tbsp garam masala
  • 1 tbsp red chili powder
  • 1 tbsp turmeric powder
  • 1 tbsp lemon juice
  • 3 tbsp fresh coriander leaves, chopped
  • ½ cup milk (optional)
  • 1 tsp cumin seeds
  • 2 tbsp oil
  • Salt to taste

Instructions:

  1. Start by soaking paneer cubes in warm water for about 15–20 minutes. This helps keep it soft. Drain and crumble it with your hands or grate it if you prefer a finer texture.
  2. Heat oil in a pan and add cumin seeds. Once they start crackling, toss in the grated ginger and chopped green chilies. Let them sizzle for a few seconds.
  3. Add the chopped onions and sauté until they turn translucent.
  4. Next, add the capsicum and cook for a minute. You want it to stay slightly crunchy.
  5. Sprinkle in the coriander powder, garam masala, red chili powder, and turmeric. Give everything a quick stir to toast the spices without burning them.
  6. Add the crumbled paneer and salt, mixing everything well. Break apart any large chunks.
  7. Let it cook on medium heat for 2–3 minutes. If you want a creamier texture, add a splash of milk at this stage.
  8. Turn off the heat and mix in the lemon juice.
  9. Garnish with fresh coriander leaves and serve hot with roti or paratha.
